Wash and dry produce. Quarter @potatoes{12%oz}(peel if preferred). Finely chop @chives{1%bunch}. Dice @mini cucumber{1%unit} and @tomato{1%unit}.

In a #microwave-safe bowl{}, place potatoes and season with @salt{1%tsp} and @black pepper{½%tsp}. Add @garlic herb butter{2%tbsp} and cover with #plastic wrap{}. Microwave until tender and steaming ~{5%minutes}.

Meanwhile, pat @chicken cutlets{12%oz} dry and season with salt and pepper. Drizzle @cooking oil{1%tbsp} in a #hot pan{}; cook chicken until cooked through ~{6%minutes} per side. Turn off heat; transfer to a #plate{} and cover with #aluminum foil{}. Wipe out pan.

Heat another drizzle of oil in the same pan. Add @cream sauce base{½%cup}, @parmesan cheese{½%cup}, and chives, stirring constantly until sauce is smooth and slightly thickened ~{2%minutes}.

In a #large bowl{}, toss @mixed greens{4%cups}, cucumber, tomato, and @honey dijon dressing{2%tbsp}.

Spoon sauce over chicken and potatoes. Serve with salad.
